Spinach and sweet corn balls with coconut milk sauce

Ingredients Serving: 4

  1. Spinach finely chopped 1/2 bunch
  2. 1/2 cup sweet corn
  3. 2 green chilli finely chopped
  4. 1/2 tsp grated fresh ginger
  5. 1/2 cup potato powder or boiled potatoes
  6. Grated coconut 1/4 cup
  7. 1/4 cup All purpose flour
  8. Salt to taste
  9. 1/2 cup corn meal or fine powdered bread crumbs
  10. Oil for frying
  11. For the Coconut milk sauce :
  12. Extract thick milk from fresh coconut or canned coconut milk
  13. 1/2 tsp oil for tempring
  14. Mustard 1/2 tsp
  15. Red chilli 1 - 2
  16. Curry leaves a few
  17. Grated coconut 1/4 cup

Instructions

  1. Microwave the spinach and corn for 2 minutes. Keep aside to cool.
  2. Grind the spinach and corn to a coarse paste, keep aside.
  3. Take a mixing bowl. Add ground spinach, salt, grated coconut, green chilli, ginger, potato powder and maida. Mix well and keep aside.
  4. Heat the pan with enough oil. When oil is hot, make small balls of spinach mixture and roll it on the bread crumbs. Slowly drop it in the hot oil.
  5. Fry until golden brown in color on a low flame. Take them out and place them on a tissue paper.
  6. For coconut milk sauce : Take a pan, add thick coconut milk, cook until the milk becomes thick and add salt.
  7. Heat the pan and give a tempering with mustard, red chilli and curry leaves.
  8. For plating: Deep fry 1 tbsp grated coconut till golden brown in color, remove and place them on a tissue paper. Same way fry finely chopped spinach and place them on a tissue paper.
  9. Take a serving plate, spread the coconut milk sauce. Place the spinach corn balls on top of the spinach balls, spread a spoonful of coconut milk sauce then sprinkle fried coconut and fried spinach. Serve hot.
