Palak Patta Chaat

Ingredients to make Palak Patta Chaat

  • 1 full bunch of spinach/Palak
  • For gram flour batter:
  • 5-6 tablespoon gram flour/besan
  • 1/2 teaspoon Ajwain
  • 1/2 teaspoon red chilli powder
  • A pinch of hing
  • salt as required
  • oil for frying
  • Powdered bread crumbs 1/2 cup
  • For assembling:
  • 1 cup curd (whisked)
  • Green chutney (mint and coriander) as per taste
  • tamarind and date chutney(mixed together) as per taste
  • Black chana (boiled) 1 cup
  • masala for toppings:
  • Chaat masala 1/2 tsp
  • red chilli powder 1/4 tsp
  • jeera powder 1/2 tsp
  • salt to taste

How to make Palak Patta Chaat

  1. Carefully pluck the spinach leaves and wash it properly.
  2. Pat dry and sprinkle salt over it and keep it aside for 10 minutes.
  3. Prepare the batter of gram flour, ajwain, red chilli powder and salt using water. The batter should be slightly thick and not watery.
  4. Heat oil in a kadhai.Take a spinach leaf and apply the batter very gently with your fingers.
  5. Roll the leaf with the powdered bread crumbs carefully and fry on a medium flame.
  6. Repeat the same with all the leaves.
  7. At the time of serving, place the fried patta's on a plate. Add the toppings one by one. Curd, green chutney, tamarind date chutney, black chana, chaat masala, jeera powder and red chilli powder.

My Tip:

While making tamarind and date chutney. Soak it for about half an hour and then grind together using very little water. While making green chutney,along with chopped coriander take 1-2 green chilli, almonds and grind it to a paste. Almonds will give a creamy taste.
