Ingredients Serving: 5

  1. Fresh mushrooms 15-20
  2. Soya bean wadi 1 1/2 cups
  3. Ginger 1 inch piece
  4. Garlic 5 cloves
  5. Onions 3 medium sized
  6. Tomatoes 2 medium sized
  7. Oil 1 1/2 tsp
  8. Bay leaf 1
  9. Crushed pepper corn 1/2 tsp
  10. Red chilli powder 1 tsp
  11. Coriander powder 1 tsp
  12. Turmeric powder 1/4 tsp
  13. Garam masala powder 1/2 tsp
  14. Salt to taste

Instructions

  1. Wash mushrooms in flowing water, drain well and cut into quarters.
  2. Soak soya bean wadi in warm water for fifteen to twenty minutes. Squeeze to remove excess water and then cut them into two.
  3. Peel, wash and chop ginger, garlic and onion.
  4. Wash tomatoes and finely chop.
  5. Heat oil in a non-stick pan, add bay leaf, crushed pepper corn and stir fry briefly.
  6. Add in chopped ginger and garlic.
  7. Add chopped onion and continue cooking until onion turns translucent.
  8. Add red chilli powder, coriander powder and turmeric powder. Mix in the chopped tomatoes and continue cooking over medium heat.
  9. Add the mushrooms and soaked soya bean wadi.
  10. Sprinkle garam masala powder, salt and then mix well. Cover and simmer over medium heat for two to three minutes. Serve hot.
