ABOUT Jaggery Carrot Halwa RECIPE

An attempt to create a healthier version of our favorite gajar ka halwa which turned out really tasty.

Ingredients Serving: 2

  1. Carrot - 2 nos
  2. Milk - 250 ml
  3. Jaggery - 100 gms
  4. Ghee - 100 ml
  5. Cashews and raisins - for garnishing
  6. Elaichi - 2 nos

Instructions

  1. Grate the carrots. Place kadai on gas. Add 1 spoon of ghee. Fry cashews till brown and keep aside. Then add raisins and fry till brown. Keep it aside.
  2. Add elaichi and allow it to splutter. Then add the grated carrots and fry for few minutes till the raw smell goes.
  3. Add milk enough to soak the carrots and allow it to get cooked in medium flame. The milk will skim as the carrot gets cooked.
  4. Once the carrot absorbs all the milk add broken jaggery and stir it well till the jaggery melts and starts cooking with carrots
  5. Keep stirring constantly in medium flame. Add some ghee if the stirring gets tough till the halwa leaves side. Switch of the gas and remove from stove.
  6. Add the fried cashews and raisins and garish it and serve hot.

yumm...i too make carrot halwa using jaggery. it gives more depth to the flavor
