ABOUT Ari Pathri RECIPE

This is a kerala dish. Ari means rice in Malayalam, and ari pathiri is like our chappathi or pancake made out of rice flour. Whenever I enquire about breakfast of my friend family from Kerala, mostly they used to tell pathiri. From that day I developed interest and prepared it in home and it becomes favourite dish of my kids.

Ingredients Serving: 2

  1. Rice flour - 2 cups
  2. Water - 2 + 1 cups
  3. Salt to taste

Instructions

  1. Fry the rice flour in a hot pan, till it reaches cream colour and allow to cool.
  2. Boil 2 cups of water in a pan. Then add the rice flour to the water. Allow it to cook for two to three minutes on a low flame. Then with a spoon mix it to form lumps and then turn of the flame.
  3. Empty it to a wide plate and then dipping your hand in the water knead the flour well till it becomes soft like chappathi. Kneading the flour only decides the result of soft pathiris. Make small balls out of the dough.
  4. Then press the balls in chappathi plate either by using oil or dry rice flour. Using of oil will result in thin pathiris. But I used flour only. Like this press all balls and dust it with rice powder.
  5. Keep on a non stick tawa, put the pathiri and flip it after a few seconds, again flip it, till it puffs up. Then remove it from tawa and keep on a plate. Like this cook all the pathiris.
  6. Serve hot with any gravy and in Kerala it is usually served with non vegetarian gravies.
