Palak Paneer

Ingredients to make Palak Paneer

  • spinach 1 cup
  • paneer cubes 1 cup
  • 2 green chillies
  • 2 garlic cloves
  • 4-5 cashew nuts
  • 1/4 cup fresh cream
  • 2 garlic cloves, chopped
  • 1 medium sized onion, chopped
  • turmeric a pinch
  • salt as per taste
  • Garam masala 1 tsp
  • butter and oil as required

How to make Palak Paneer

  1. Take one cup palak stems cut.
  2. Take a bowl of hot water and blanch the palak along with two green chillies. Add a pinch of sugar so that it retains the colour of palak. After blanching of palak, put them in cold water immediately.
  3. In a wok or a kadai take 1 tbsp butter and 1 tbsp oil (Or more if you want).
  4. Add chopped garlic and saute for a minute. Add chopped onion and saute the onions until golden brown.
  5. Take cashewnuts, ginger, half an inch and garlic cloves in a mixer. Blend well.
  6. Add in blanched palak and green chillies. Make a puree.
  7. To the cooked onions, add a pinch of turmeric.
  8. Add the mixture of cashew and palak puree. Let it cook for 2 minutes, now add salt and add in the fried paneer or raw paneer pieces into the gravy.
  9. Add a tbsp of fresh cream. Sprinkle some garam masala and a dash of lemon juice.
  10. Lastly sprinkle a tsp of daniya powder. Cover the wok and turn off the flame.
  11. Garnish with cream and serve hot.

My Tip:

Do not over cook palak, it loses it colour and nutritional values. Add only a pinch of sugar while blanching or it may alter the taste. Palak already has sodium within, so salt should be added carefully.
