ABOUT Rawa/Sooji Kachori RECIPE

This is a perfect dish for a rainy day or any guests coming home for tea. This recipe is inspired from indianvegetarianrecipes.com and it really came out very well. Everyone loved the dish alot. I highly recommend everyone to try this once. You will surely gonna repeat it again and again. Crispiness which comes from Sooji/Rawa is what makes this dish different.

Ingredients Serving: 8

  1. For outer covering:
  2. Rawa/Sooji 2 cups
  3. Cumin seeds 1 tsp
  4. Water 4 cups
  5. Oil 1 1/2 tbsp
  6. Salt to taste
  7. For Stuffing:
  8. Boiled Potatoes 6 to 7
  9. Green chillies 3 to 4 (depending on the spice level you need)
  10. Ginger 1 tsp
  11. Garlic 8 to 9 cloves
  12. Lime Juice 2 1/2 tsp
  13. Salt to taste

Instructions

  1. Add Water to a pan and bring it to boil. Once it starts boiling add cumin seeds and salt to it.
  2. Add Rawa/Sooji little by little. Stir it continuously so that lumps are not formed and the mixture gets thick.
  3. Once mixture is thicken, turn off the flame and keep it aside to cool.
  4. Grind Garlic, Ginger and Green chillies to form a paste and keep it aside.
  5. Mash the boiled potatoes and add the garlic-ginger-chillies paste to it and mix it nicely.
  6. Add the salt and lime juice. Mix it finely.
  7. Grease your hands with oil and knead the sooji to form a soft dough.
  8. Divide the dough in equal portions and keep it aside. In the similar way, prepare the equal balls for potato mixture too.
  9. Take one ball in the hand and flatten it. Now put the potato mixture ball in the middle and seal it from all the sides nicely.
  10. Flatten the stuffed ball to give it a kachori shape. In the same way, make all the kachoris and keep it aside.
  11. Heat the oil in a pan to high medium flame. Once the oil is hot fry the kachoris till they are crispy and golden brown.
  12. Serve hot kachoris with Khatta Meetha Chutney or Tomato sauce.
