ABOUT Coconut Kofta Curry RECIPE

This is a no onion garlic recipe, hence could be eaten on festivals like Navratri or fast days.

Ingredients Serving: 4

  1. 1 cup grated fresh coconut
  2. 1 tbsp soaked chana dal
  3. 1 tbsp rice flour
  4. 1 inch ginger
  5. 2 green chillies
  6. Salt to taste
  7. Oil for frying
  8. 1 bay leaf
  9. 1/2 tsp jeera
  10. 1/2 tsp sugar
  11. 1 tbsp oil
  12. 1 tsp dhania powder
  13. 1 tsp jeera powder
  14. 1/2 tsp garam masala
  15. 1/2 tsp turmeric powder
  16. 1/2 tsp red chili powder
  17. 1/2 tsp kashmiri red chili powder
  18. 1 tbsp cashew nut paste
  19. 2 tomatoes cut into pieces
  20. 1/2 tsp kasoori methi powder
  21. Coriander leaves for garnishing
  22. Water as required

Instructions

  1. Grind fresh coconut, soaked chana dal, ginger, green chillies and salt into smooth and fine paste except the rice flour.
  2. Mix rice flour and salt to this mixture. Make small balls out of it and shape it as koftas.
  3. Heat oil in a kadhai. Deep fry the koftas. Keep aside.
  4. For gravy: Heat oil in a pan, add sugar and let the sugar turn a little red.
  5. Add jeera, bay leaf and all the powdered spices.
  6. Fry for a while and then add the tomatoes. Add salt to taste and fry till the oil separates.
  7. Add cashew nut paste and a little water.
  8. Let it cook for 3-4 minutes. Add kasoori methi powder and add the koftas.
  9. Turn off the heat and garnish with coriander leaves.
  10. Serve hot.
