Ingredients Serving: 6

  1. Basmati rice 1 kg
  2. chicken 1 1/2 kg
  3. yoghurt 1/2 kg
  4. chilli Powder 2 tbsp
  5. garam masala powder 1 tbsp
  6. turmeric powder 1 tsp
  7. Whole garam masala:
  8. cinnamon 4 sticks
  9. cardamom pods 5
  10. Caraway seeds 1 tsp
  11. Black peppercorns 1 tsp
  12. cloves 6
  13. salt to taste
  14. coriander and mint chopped a handful
  15. Onions, deep fried 3 to 4
  16. Same oil to be reserved for marination
  17. ghee 1 tbsp
  18. Colour to sprinkle on top


  1. Boil rice with all the whole masalas, drain and keep aside.
  2. Marinade the chicken with all the masalas including the reserved oil in which the onions are fried, except ghee.
  3. Do not add whole of it, add about 1 cup.
  4. Let it rest for atleast 2 hours.
  5. For the dum: Arrange the layers according to your preference but see to it that the final layer is that of the rice.
  6. Mix the colour in little milk and pour on top.
  7. Also add the ghee.
  8. Garnish with some fried onions and coriander leaves.
  9. Serve hot with raita.
