Absolutely rocking dish from the State Of Gujarat. Perfect and spongy dhoklas can be made right in the comfort of your homes.

Ingredients Serving: 4

  1. Gram flour 2 cups
  2. curd 1/2 cup
  3. turmeric 1/2 tsp
  4. salt to taste
  5. Grated ginger a tsp
  6. Green chillies finely chopped 3
  7. asafoetida a pinch
  8. Citric acid 1/4 th tsp or lemon juice 1 tbsp
  9. oil 2 tbsp
  10. Eno fruit sachet 1
  11. For the topping: Grated coconut as required.
  12. Fresh coriander chopped as required
  13. For the tempering: mustard seeds 1 tsp
  14. Dry red chillies or green chillies, slit 4
  15. Curry leaves a few


  1. Make a thick batter using all the ingredients except the tempering and topping ones.
  2. Grease the plates of the dhokla maker.
  3. Just before steaming, add the eno and mix lightly.
  4. Pour in the plates and steam on high for 15 minutes.
  5. Check with a fork to see if it is done.
  6. After cooling down a bit, cut them into desired shapes.
  7. Top it up with the tempering and garnish with lots of grated coconut and chopped coriander leaves.
  8. Serve hot with chutney of your choice.
