Ingredients to make Roasted / Grilled Tomato Paneer sandwhich

  • 4 tomatoes, halved
  • 2 garlic cloves, crushed and finely chopped
  • 1 tbsp olive oil
  • salt as per taste
  • Ground black pepper as per taste
  • 8 bread slices
  • butter, room temperature 2 tbsp
  • fresh basil leaves a few
  • 1 tbsp dry thyme
  • 1 1/2 cup paneer (cottage cheese) grated

How to make Roasted / Grilled Tomato Paneer sandwhich

  1. In a medium bowl, toss together tomatoes, garlic, olive oil, salt and pepper.
  2. Grill it in a microwave for 6 minutes or you can roast it in the oven for 170 degrees centigrade for 20 minutes.
  3. Prepare the sandwiches. Heat a nonstick pan over medium high heat. Spread butter on the sides of the bread. With butter side down, top with grated paneer, roasted tomato, thyme and basil leaves.
  4. Place the sandwich on the pan and cook until the bottom is golden brown, for about 3 minutes. Flip, press with a spatula and cook the other side until crispy, golden brown.
  5. Serve immediately with sauce or chutney.
