Ingredients to make Chocolate Almond Flour Cake

  • 75 gm of semisweet chocolate chopped
  • 75 gm of unsalted butter room temperature
  • 2 eggs room temperature
  • 1/2 cup of white granulated sugar
  • 1/4th cup of cocoa powder
  • 1/4 cup of almond flour
  • 1 tablespoon of baking powder
  • 1 table-spoon of vanilla extract
  • a pinch of salt
  • almond flakes to garnish the sides
  • FOR THE CHOCOLATE GANACHE ( OPTIONAL) 1. 1/4th Cup of heavy cream
  • 50 gms of chopped semisweet chocolate

How to make Chocolate Almond Flour Cake

  1. Preheat the oven at 180*C and butter a cake pan; then line with a parchment paper and set aside. Using a double boiler, Melt the chopped chocolate and butter then set them aside.
  2. In another bowl, add in the eggs with a dash of salt and beat well using an electric hand mixer. Then add in the sugar to the beaten eggs spoon by spoon and keep beating until you get a very airy pale looking batter.
  3. In another bowl mix the almond flour, baking powder, and cocoa powder. Now we have three components to incorporate together. First of all add few spoons of dry ingredients mix to the melted chocolate and mix well.
  4. Then add some of the beaten egg and fold using a rubber spatula. Now add in the rest of the dry ingredients and gently mix. Pour the beaten egg mix in two or three turns and fold gently until every thing is well incorporated.
  5. Bake for 30 minutes in a preheated oven at 180* C. The tooth pic inserted in the center will have some wet crumbs. Just make sure that the center of the cake is a little set and that the sides are well done.
  6. When done, let the cake cool on a wire rack completely before you take it out of the cake pan. Meanwhile prepare the chocolate ganache – Place chopped chocolate in a bowl. Heat the cream in a sauce pan ( do not boil the cream ).
  7. Pour the hot cream over the chopped chocolate. Allow the cream to sit on chocolate for about a minute, then mix until smooth and glossy. Pour the ganache over the top of the cooled cake.

My Tip:

The recipe has used almond flour; If you don’t find almond flour, just dip some almonds overnight, then take off the peels. Pat the almonds dry and then ground them in a food processor to a fine powder.
