The traditional hit of Maharashtra, the heart-throb of India, I have cooked the classic pav bhaji in the healthy, tasty and unique way.

Ingredients Serving: 4

  1. Oil 1 tbsp
  2. Chopped onion 1
  3. Chopped capsicum 1
  4. Chilli garlic paste 1 tbsp
  5. Tomato puree 1 cup
  6. Salt to taste
  7. Soya granules 1/2 cup
  8. Boiled and grated beetroot 1/2 cup
  9. Boiled and grated cauliflower 1/2 cup
  10. Boiled peas 1/2 cup
  11. Boiled potatoes 1/2 cup
  12. Water 1/2 cup
  13. Pav bhaji masala 2 tbsp
  14. Chopped coriander 1 tbsp
  15. Slices of whole wheat bread as required
  16. Lemon juice 1 tbsp
  17. Coriander and lemon wedges to garnish

Instructions

  1. Heat oil in a pan, add the onion, chilli garlic paste, capsicum and cook for 1 minute.
  2. Add the tomato puree, salt and cook for 2 minutes.
  3. Add the soya granules, beetroot, cauliflower, green peas, potatoes, water, pav bhaji masala, chopped coriander and cook it for 3-4 minutes.
  4. Garnish with coriander leaves, lemon wedges and serve it with whole wheat bread.
