Banana Oats Muffin

Ingredients to make Banana Oats Muffin

  • 1/2 cup oil
  • 2/3 cup honey
  • 2 eggs
  • 3 bananas mashed
  • 1/2 cup Milk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon cinnamon, plus more for sprinkling on top
  • 1¾ cups whole wheat flour
  • 1 cup oats, plus more for sprinkling on top
  • 1 teaspoon granulated sugar for dusting on top
  • 1/2 cup walnuts (optional)

How to make Banana Oats Muffin

  1. Arrange the muffin tray with liners. Keep aside. In a bowl add the oats and milk together and keep aside for 5 minutes.
  2. In a large bowl beat together oil and honey. Add in the eggs one at a time Add in mashed bananas. Followed by the baking soda, vanilla extract, salt and cinnamon.
  3. Add in the oats and milk mixture and sift in the flour. Mix until just combined. Throw in the walnuts if using.
  4. Pour into the muffin tray. Sprinkle the muffins with a bit of oats and sugar. Bake at 165 degrees centigrade for about 25 minutes. Cool. Serve with some butter

In point no.2 you have mentioned about adding eggs, but in the ingredients you have not mentioned how many eggs to be used. Please add it, would like to make these for my 2 year old.
