Ingredients Serving: 4

  1. 250 gms bhindi (lady's finger)
  2. 3tbsp besan (gram flour)
  3. 1tsp Ajwain (carom seeds)
  4. 1tsp red chilli powder
  5. 1 tsp Turmeric powder
  6. 1 tsp coriander powder
  7. 1 tsp dry mango powder
  8. Salt to taste
  9. Mustard Oil for cooking

Instructions

  1. Cut bhindi into small pieces . Sprinkle besan and all spices except salt & mix well with bhindi. Sprinkle some water enough for the besan mix to form a coat on the bhindi. Keep the mix for half an hour
  2. allow it to get marinated. Add salt just before frying. Heat mustard oil in a pan, deep fry the marinated bhindi in small quantities till it turns crispy. Allow it to cool after which it will turn crispy.
  3. Ideal to carry for long distance travel as it stays good for more than 24hours
