ABOUT Sweet Khaja RECIPE

It is a delicious and crispy sweet dish with an amazing texture and crisp layering, full of sweetness from sugar syrup.

Ingredients Serving: 4

  1. Maida 1 Cup +2 tsp extra
  2. Baking powder 1/4 tsp
  3. Ghee 3 tsp
  4. Water as required for making the dough
  5. Oil for deep frying + 3 tsp for the dough
  6. For Sugar Syrup:
  7. Water 500 ml
  8. Sugar 150 grams
  9. Cardamom 3 crushed

Instructions

  1. Take 3 tsp ghee and 2 tsp Maida, mix well and make a fine paste. Keep aside.
  2. In a bowl, combine the flour, baking powder, 3 tsp oil and rub the flour well in between the palms to incorporate the oil well.
  3. Mix nicely and add water little by little at a time and knead it into a fine dough. Keep aside.
  4. Now ina pan add the water, sugar and the crushed Cardamon and bring to boil till the Syrup thickens and it reduces to half quantity which will take about 10 mins or little more. Keep aside.
  5. Now take the dough and divide it into equal sizes and roll it to balls.
  6. Take the balls and flatten it and make thin chapatti with the help of a rolling pin. Continue the same with the remaining ones.
  7. Now spread the ghee maida paste evenly in one chapati and lay another chapati over it and roll it from one end.
  8. Cut off the edges for even shaping and cut the roll into 1 to 1.5 inches pieces.
  9. With a rolling pin flatten it gently.
  10. Heat oil in a pan.
  11. On medium heat fry the rolls till golden and crisp in all sides which will take about 10 mins.
  12. Once it is fried nicely take out and dip in the sugar syrup and let it soak for 2-3 mins.
  13. Remove from syrup, let it cool down and enjoy your sweet Khaja.
