Chocolate fudge cake

Ingredients to make Chocolate fudge cake

  • flour-300 gms
  • Castor sugar- 550gms
  • Hot water-175 ml
  • eggs-4 nos
  • butter-250gm
  • Cocoa powder- 55 gm
  • Dark Chocolate- 250 gm
  • Coffee powder- 30 gm.
  • Vegetable oil-30 ml
  • Milk- 125 gm.
  • baking soda-2.5 gm
  • Baking powder -10 gm
  • salt-1/2tsp.
  • Chocolate icing-
  • Plain chocolate 200gm
  • Fresh cream-100

How to make Chocolate fudge cake

  1. Pre- heat the oven to 160 C. Degree. Grease a deep round cake tin .
  2. In a bowl add sugar, butter ( soften),chocolate,waterand coffee and place the bowl on a dubble boiler to melt and mix the mixture forming a smooth and all ingredients are combined together.
  3. Add milk to mixture and mix well.add eggs one by one to the mixture and mix it to form a smooth paste.
  4. Add oil and all of the remaining indredients and mix well.
  5. Add the mixture in a grease pan .
  6. Bake in pre-heated oven for about 50 mins.or until well risen and a skewer inserted into the center come out clean, leave to cool in the tin for 10 mins. Then turn out and cool on a wire rack
  7. To make the icing, melt the chocolate gently in a bowl set over a pan of hot water,stirring occasionally. Add cream and stir until the icing has the consistency of thick pouring cream , cooling if necessary.

My Tip:

Stand the wire rack on a baking trey to catch any drips. Pour the icing over the cake smoothing it over the top and sides with a palette knife, allow to set and decorate if you like.
