  1. Pumpkin(Kakharu) cut into cubes 1 cup Medium size potatoes(Alu) cut into cubes 2 nos beans 10 to 12 nos Raw banana(Kancha Kadali) peeled and cut into cubes, cut into cubes 1 no of Sweet potato ,peeled and cut into cubes 1 no Colocasia(Saru) peeled and cut into cubes 2 nos of Yam(Mati Alu) peeled and cut into cubes 1/2 cup Brinjal( Baigana) cut into cubes 1 Ash Gourd(Pani Kakharu) peeled and cut into cubes 1/2 cup Elephant apple(Aau) peeled and cut into long or 1/2 cup Tomato or Ripe Cucumber(Budha Kakudi) peeled and cut into cubes 1/2 cup Parwal(potala) cut into cubes 3 nos Ridge gourd(Jahni) peeled and cut into cubes 1 no Grated coconut(Nadia) and 1/4 cup chopped coconut 1/4 cup Grated ginger 2 inchs Bay leaf 1 Soaked kala Chana 1/2 cup Sprouted green gram( moong) 1/2 cup Turmeric (Haldi)powder 1 tsp Salt to taste Powdered jaggery(Guda) 1 tbsp Dry red chillies for tempering 2 to 3 Cumin seeds 1 tsp Roasted cumin and red chilli powder 1 tbsp Ghee 1 tbsp N prawn.

Instructions

  1. Soak the kala chana for 3 to 4 hours, preferably overnight. Wash the green moong beans and soak overnight in enough water . Drain the water and clean properly. Wet a clean cotton cloth and wring excess water from it .Tie the moong daal in the cloth and keep it covered in a container for a day. when you open it , you can see sprouts coming from it. Dry roast 1 tbsp cumin seeds and 4 to 5 dry red chilies , cool and grind to a fine powder. keep aside. Wash and cut the vegetables
  2. And prawn wash and fry n keep a side. Wash and cut the vegetables . In a heavy bottomed vessel, add the potatoes, yam, colocasia, pumpkin, sweet potato, , kala chana along with 1 cup water , turmeric powder, salt, bay leaf, grated ginger and cook. Since these vegetables took long time to cook, you need to cook them first.
  3. After 5 minutes, add the rest of the vegetables , the chopped coconut, cover and cook on medium heat. You do not have to add more water as many of the vegetables will start releasing it's own juice. Once the vegetables are half done, add the elephant apple and the cook till all the vegetables are cooked perfectly. If you do not have elephant apple, you can add tomatoes also. Remove from heat.Add the sprouted moong to it . In a pan, heat the ghee and add the red chillies and cumin seeds, once it starts to splutter ,add onion slice n ginger garlic paste and mix well add chilli powder, chiken masala powder, garam masala powder n mix well add the roasted cumin and red chilli powder to it and immediately pour this over the cooked vegetables . Add prwan fry and Add the grated coconut, mix well and cook on low flame for 4 to 5 minutes. Serve hot with rice or roti or paratha.
