ABOUT Australian Lamingtons RECIPE

The traditional chocolate lamingtons, with an inverse effect, with chocolate cake inside, coated with white chocolate and coconut.

Ingredients Serving: 8

  1. Cake flour - 1.5 cup
  2. Cocoa powder - 1/4 th cup
  3. Hot water - 1/2 cup
  4. Baking powder - 1 tsp
  5. sugar - 3/4 th cup
  6. eggs - 3
  7. butter - 1/2 cup
  8. Refined oil - 1/2 cup
  9. Vanilla extract - 1.5 tsp
  10. Outer coating :
  11. White chocolate - 1/3 rd cup
  12. Icing sugar - 2 cups
  13. Milk - 2 tbsp
  14. butter - 1.5 tbsp
  15. Grated Dessicated coconut

Instructions

  1. Whisk the butter and refined oil together.
  2. Then add the sugar and whisk till fluffy.
  3. Then add the eggs one by one till all mixed.
  4. Mix the cocoa powder with hot water and let it cool for few minutes. Add this to the above egg mixture.
  5. Sieve the flour and baking powder together.
  6. Fold in the flour mix into the egg batter.
  7. Put this into a greased baking tray and bake at 170 degree Celsius for 28 minutes. Cool and cut into squares.
  8. Now melt the icing sugar, white chocolate, milk and butter together in a double boiler.
  9. It should be of liquid consistency.
  10. Dip the squares in it and coat with grated coconut.
  11. Cool and let it set.
