Ingredients Serving: 6

  1. Butter - 350gms
  2. 2-3 Egg yolks (hard boiled)
  3. Icing sugar- 175g
  4. All purpose flour- 375g
  5. Corn flour- 175g
  6. Vanilla extract- 1 tsp
  7. Lemon zest - One lemon

Instructions

  1. 1. Place the butter, sugar and vanilla extract in a table top mixer, using a paddle attachment, mix them till soft and fluffy.
  2. 2. Add the sieved egg yolk, lemon zest and mix, continue adding the flour and mix till they form a homogeneous mixture (1-2 minutes).
  3. 3. Divide the dough into two equal halves and rest for 10 minutes and roll them out making 2 inch thick square. Using a flower shaped cutter cut and lay the Canestrelli's on to a baking tray layered with parchment paper.
  4. 4. Bake them at 140°C for 20 minutes. Allow them to cool and generously dust with icing sugar and serve.
