ABOUT Cake Sandesh RECIPE

Cake? Sandesh? What if you could enjoy both together? A chocolate cake with a dash of fresh coconut, and some gold dust, shaped into a sandesh :)

Ingredients Serving: 12

  1. For the cake:
  2. All-purpose Flour - 2/3 cup (83 gm)
  3. Dutch-processed unsweetened cocoa powder – 1/3 cup (39 gm)
  4. Baking Powder – 3/4 tsp
  5. Baking Soda – 1/2 tsp
  6. Salt – 1/4 tsp
  7. Superfine castor sugar – 2/3 cup (150 gm)
  8. Egg, room temperature – 1, large
  9. Milk – 4 tbsp (59 ml)
  10. Vegetable oil – 3 tbsp
  11. Water – 4 tbsp
  12. Vanilla extract – 1/2 tsp
  13. Butter – for greasing
  14. For the Sandesh:
  15. Coconut - 1/2 cup, grated
  16. Condensed milk - 1/4 cup
  17. Edible gold dust

Instructions

  1. Preheat oven to 180 C, and grease and line a 6 inch baking tin.
  2. In a large bowl, add the egg, oil, sugar and vanilla extract and whisk it well with a hand beater, or a wire whisk.
  3. To this, sieve in the flour, salt, baking soda, baking powder, and cocoa powder.
  4. Whisk, whisk, whisk…and add the water, forming a thick, smooth batter.
  5. Pour this into the greased tin, and bake for 40 minutes, or until skewer comes out clean.
  6. Let the cake cool completely. Once cooled, crumble it up. To this, add the condensed milk and grated coconut.
  7. Mix well, kneading the cake until it becomes a smooth lump.
  8. Grease your sandesh moulds, and gently press a small lump of cake mixture in and smoothen it out with your finger.
  9. Gently remove the cake from the mould. Repeat process until you have finished your cake mixture.
  10. Now carefully dust the tops of the cake sandesh with some gold dust.
  11. Leave it to chill for a few hours, and serve.
