ABOUT Mango and Coconut Cake with Coconut, Rum and Mint Glaze RECIPE

A perfect dessert for mongo lovers, specially when the urge to eat mangoes strikes and mangoes are not in season. When I first made it, none of my friends were able to figure out how I got such a lovely mango flavour without fresh mangoes. Most thought I had relied on frozen mango puree! So go ahead and surprise your family and friends...

Ingredients Serving: 10

  1. Flour 2 cups
  2. Coconut Milk Powder 1/2 cup + 1/4 cup for glaze
  3. Mango Tang Powder 1/2 cup
  4. Sugar 1 cup + 1/2 cup for glaze
  5. Refined oil 1/2 cup
  6. Eggs 4
  7. Baking powder 1 tsp
  8. Baking soda 1/4 tsp
  9. Salt a pinch
  10. Lemon juice 2 tbsp
  11. Buttermilk 1/4 cup
  12. Vanilla essence 1/2 tsp
  13. Peach food colouring few drops (optional)
  14. Mint leave a handful
  15. Water 1/2 cup
  16. Rum 2 tbsp

Instructions

  1. Preheat the oven to 180°C and grease and flour a bundt cake tin.
  2. Sift together the flour, baking powder, baking soda and salt. Add the 'Mango Tang' powder and Coconut Milk powder, mix well.
  3. In a bowl, beat together the sugar and oil. Add the food colouring (optional) and the vanilla essence.
  4. Add the four eggs, one at a time, beating well between each addition.
  5. Now add the flour mix in three batches, beating well to get a smooth batter.
  6. Add the lemon juice and enough buttermilk (you may need less than a 1/4 cup) to get a good batter consistency.
  7. Pour into the prepared tin and bake for between 30 to 40 minutes, or till a skewer inserted in the middle comes out clean.
  8. Remove from oven and pour the glaze while still hot.
  9. Coconut-Mint-Rum Glaze: Mix together sugar,coconut milk powder, handful of mint leaves and water.
  10. Cook on a medium flame till the sugar has melted. Add a couple of tablespoons of rum and pour over the warm cake.
