Ingredients Serving: 25

  1. 1 fresh big pineapple sliced (used half for pinacolada)
  2. 1 big coconut brown one (used half for pinacolada)
  3. 2 cups Sugar
  4. 1 cup walnuts
  5. 1/4 cup fresh mint leaves
  6. 400gms dark chocolate compound bar
  7. 1 1/2 cup water
  8. 2 cup coconut powder

Instructions

  1. Take half pineapple and cut into thin slices.
  2. Take a pot, add water and sugar and bring to boil.
  3. Add pineapple slices.
  4. Cook for 10 minutes.
  5. Remove and cool the slices.
  6. Save sugar water aside.
  7. Cut half de-skinned coconut into small pieces.
  8. Now take coconut and pineapple boiled slices in a mixi jar.
  9. Grind to puree.
  10. Add all this to sugar syrup with pinacolada pulp.
  11. Cook on medium flame to dry the syrup.
  12. Add chopped mint leaves and chopped walnut pieces, mix altogether.
  13. Now take dark chocolate compound, melt in microwave or on gas double boiler.
  14. Nicely beat melting chocolate, add cooked coconut mix and cook for a minute.
  15. Cool the mixture in the fridge for an hour or two.
  16. Take a plate, put coconut powder.
  17. Remove the coconut mixture from fridge and make balls.
  18. Coat these ball with coconut powder.
  19. Keep inside fridge for 2-3 hours to set the balls.
