Ingredients to make Ice cream Munchkins

  • 250 gms of icecream - Flavour of your choice. I had homemade butterscotch and sweetcorn flavoured.
  • 200 gms dark chocolate
  • 4-5 tbsp of rice crispie

How to make Ice cream Munchkins

  1. Transfer your ice cream in a small rectangle or square tray. Level and keep it in the freezer for 5 to 6 hours until frozen hard.
  2. After the ice cream is chilled. Just check and keep it back in the freezer.
  3. Prepare your tray now. Cover it fully with the butter paper or cling film or aluminium foil.
  4. Now melt your chocolate on a double boiler or microwave it for 1 minute and 30 seconds. But stir after every 30 seconds. Timing can be slightly approximate according to the power of your microwave.
  5. When chocolate is fully melted, add rice crispies into it. Leave it aside.
  6. Take out your icecream and cut in cubes with a very sharp knife. With the help of a fork, dip one cube and roll into chocolate so that your icecream cube gets fully wrapped with the chocolate. Place it on the tray you prepared.
  7. Repeat the same for all cubes. Place the tray in your freezer.
  8. Start popping after 10 minutes.

My Tip:

Instead of dark chocolate, you can use milk or white chocolate too.
