ABOUT Ama Vadai/Lentil Fritters RECIPE

One of the common naivedyams in the South is the lentil fritter. It's a fun snack loaded with proteins.

Ingredients Serving: 6

  1. pea dal /skinned split pea - 2 cups
  2. Green chilies - as per spice level
  3. Ginger - one inch
  4. Coriander leaves, stalk-one handful
  5. hing - one pinch
  6. Salt to taste
  7. Oil for frying (preferable-sunflower oil/corn oil)

Instructions

  1. Soak the pea in excess water and set aside for an hour.
  2. Meanwhile, rough chop the chilies and the coriander; skin and slice the ginger.
  3. After one hour. Drain the peas well and add it to the food processor with chilies, coriander and ginger. Do not add any water.
  4. Pulse the mixture till it comes together as a coarse blend. Add in salt and hing and give it another whizz.
  5. Set oil to heat. The temperature is not to turn smoky but cook the lentil inside out, so keep it moderate.
  6. Make small balls of the batter prepared. Press it on the palm of your hand so as to have a hump in the center. Drop the vadai in the oil kept ready.
  7. Flip over when golden on one side. Cook till the bubbles reduce.
  8. Remove the Vasari and drain on a plate lined with paper towels to absorb excess oil. Your crunchy vadai is ready.
