ABOUT Nargisi kofta RECIPE

This exotic named dish is not easy to prepare but is mighty delicious, this technical dish can certainly make you the talk of the town after your dinner party.

Ingredients Serving: 6

  1. 500 grams of Minced Mutton
  2. 1 cinnamon stick
  3. 1 teaspoon garam masala
  4. ½ teaspoon cumin powder
  5. 1 teaspoon coriander powder
  6. ĵ teaspoon turmeric powder
  7. 1 teaspoon red chilli powder
  8. 3 green chillies finely chopped
  9. 1 onion finely chopped
  10. 1 tablespoon ginger-garlic paste
  11. 1 egg beaten
  12. 1 teaspoon chaat masala
  13. 3 tablespoon besan
  14. 8 hard boiled eggs
  15. Handful of coriander leaves finely chopped
  16. Food safe twine or rope
  17. Oil for deep frying
  18. Salt according to taste

Instructions

  1. Take a pan, put in the minced meat along with the cinnamon stick, turmeric powder, 1 cup water and salt.
  2. Let this cook for 20 minutes or so until all the liquid dries up. Once the water dries up, set it aside and let it cool down.
  3. Once the meat is cooled, take a large bowl and put in the meat along with the green chillies, onions, ginger-garlic paste and all the spices. Also add in the besan and beaten egg, stir this mixture well together.
  4. Keep this mutton mixture in the fridge and let it marinate for 25-30 minutes.
  5. In the meantime, peel the hard boiled eggs.
  6. After the marination time period, make 8 equal sized portions from the mutton mixture.
  7. Take one portion of the meat mixture and flatten it into a cutlet shape using your palms. Now, put a hard boiled egg in the centre and wrap the meat around it.
  8. Finally, tie a thread around the wrapped egg. Follow this process with the remaining mutton mixture and hard boiled eggs.
  9. Take a pan and heat oil for deep frying.
  10. Once the oil is hot, fry these mutton koftas and cook both the egg and the meat.
  11. Place these threaded koftas on a plate before serving. Cut the thread and slit these koftas in even slices.
  12. Serve hot with a dash of chaat masala on top.
