Cookies and Cream Cake

Ingredients to make Cookies and Cream Cake

  • 1 + 1/4 cup all purpose flour/Maida
  • 1/2 cup cocoa powder
  • 1 cup + 2 tablespoons caster sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 tablespoon apple cider vinegar/2 teaspoons lemon juice
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup hot water
  • 1 teaspoon instant espresso powder (instant coffee powder)
  • 1/3 cup oil (flavourless - like sunflower or canola or vegetable)
  • 1 teaspoon vanilla essence
  • 10 - 15 oreos of any flavor you like (leave a few and crush the rest coarsely)
  • Whipped cream frosting
  • Caramel syrup (optional)

How to make Cookies and Cream Cake

  1. Grease two 6-inch round baking pans and line them with baking paper. Preheat your oven to 180C.
  2. In a large mixing bowl, combine flour, baking powder, baking soda, salt, cocoa powder and caster sugar.
  3. In another bowl mix milk and vinegar. Add vanilla essence and oil and keep this aside. Add coffee powder to hot water and stir.
  4. Add the wet ingredients to the dry ingredients along with coffee water and 1/2 cup of crushed oreos. Using a spatula mix the batter very well until everything comes together.
  5. Pour the batter into cake tins and bake at 180C for 30 minutes. Insert a toothpick and if it comes out clean then it's done. Remove the cake from the pans once they have cooled a bit. Chill them in the refrigerator.
  6. Frost the cakes with whipped cream frosting. Add some crushed oreos in between the cake layers. Pipe as you like on the top of the cake and complete the cake by putting some oreos and drizzle some caramel syrup!

My Tip:

Chill the cake layers overnight to prevent them from breaking.
