ABOUT Eggless Chocolate cupcakes with cream cheese frosting RECIPE

The eggless chocolate cupcake recipe is a full proof recipe which gives you a super moist cupcake and I have adapted this recipe from a very famous group Chef at Large on Facebook from a very talented baker Vibha Bhutada. The cream cheese frosting is my own trial version. Btw this is my first attempt at these beauties!! :)

Ingredients Serving: 12

  1. All purpose flour 1.5 cup
  2. Hot water 1 cup
  3. Powdered sugar 1 cup
  4. Dark chocolate (any) 1/2 cup chopped
  5. Unsalted butter 1/2 cup
  6. Cocoa powder 1/3 cup
  7. Vinegar 1 tbsp
  8. Baking soda 1 tsp
  9. Vanilla essence 1 tsp
  10. Coffee powder a pinch and Salt
  11. For the frosting : Softened unsalted butter 125 gms
  12. Cream cheese 125 gms
  13. Icing sugar 4 cups
  14. Milk (only if required) 2 tsp
  15. Vanilla essence 1/2 tsp

Instructions

  1. Melt butter and chocolate in the microwave . Sift the flour, cocoa and baking soda from a height.
  2. Add 1 tsp salt . Incase you are using salted butter skip the salt. Mix all dry ingredients.
  3. Gradually pour the hot water. Now add the chocolate mix, vinegar and vanilla essence. Beat well
  4. Pour the mixture in the cupcake liners and bake for 15-20 mins at 180 degree celsius. Check using toothpick.
  5. For the cream cheese frosting: Mixe or whisk and cream together the butter and cream cheese until very smooth and creamy. Add the essence.
  6. Then slowly keep adding the icing sugar and keep mixing. If you feel its too thick only then add little milk.
  7. Then you can refrigerate this frosting for some time. Separate them and make portions and add very little of your favourite colours in these and mix.
  8. Pour into piping bag and ice your lovely cupcakes :)

These are such lovely cup cakes! I agree upon adding natural flavours than store bought! keep going!
