Ingredients to make Rabri

  • 3 l full cream milk
  • 4 tbsp each of pistachios, cashews, raisins and almonds
  • 15-20 saffron threads
  • 2-3 sheets of edible silver thins or varaq
  • 12 tsp of cardamom powder
  • 2 tsp Milk to soak saffron
  • 16 tbsp sugar but you can adjust the sweetness as per your taste

How to make Rabri

  1. Take a heavy bottom vessel. Pour milk and give a boil by stirring occasionally.
  2. Once boiled, minimise the flame to medium low and let it boil until reduced by 3/4th. By the time soak half of the saffron threads in 2 tsp of warm milk.
  3. Add sugar and soaked saffron and mix well.
  4. Let it boil at the same flame, until reduced by half of the total quantity.
  5. Now switch off the flame and add cardamom powder. Let it cool at room temperature.
  6. Once cooled, spread the silver thins and spread all the chopped dry fruits and remaining saffron threads.
  7. Chill and serve.
