Bacon and Brownie lovers rejoice! Smoky seduction of crunchy bacon bits has decided to mate with moist, fudgy brownies and the progeny is so adorably delicious, not taking me longer than a heartbeat to be smitten with the first bite. This recipe has got to result in the ultimate confection for bacon lovers and stoners alike. Bacon, baked with brown sugar sprinkled all over to "candy" it just before being added to the brownie batter! Result? Smoky, sweet and utterly addictive in each delicious bite!
Pre-heat the oven to 150°C. Line a baking tray with parchment paper.
Brush both sides of each bacon strip with maple syrup/honey or sprinkle each with brown sugar and arrange them side by side on the parchment paper.
Bake until nice and crispy, anywhere between 10-15 minutes. Make sure they do not turn brownish black.
After the bacon is done cooking, remove excess fat from the baking sheet and allow to cool. Melt 1/2 cup of the milk chocolate in a small microwave safe bowl by placing in the microwave, for 30 second increments.
Crumble the cooked bacon, making sure the bits are at least 1/2 inch thick and not too small. Coat in chocolate, remove and place them on another baking sheet placed on a tray.
Place the tray in the refrigerator for 5 minutes for the chocolate coated bacon to set.
Increase the oven temperature to 180°C.
Mix together the butter, granulated sugar, 1 cup chopped milk chocolate in a large saucepan and heat over a double boiler until the butter and chocolate have melted and the sugar has been dissolved entirely. Set aside to cool for a while.
Add eggs, one at a time, beating after each addition. Add the vanilla extract and mix through.
Add the sifted flour and cocoa powder and fold them through the batter, making sure there are no lumps.
Add in the chocolate coated bacon to the batter and fold it through.
Pour the batter into a well-greased 8x8 baking pan. Crumble the remaining bacon and add atop the batter, besides adding the chocolate chips.
Bake at 180°C for about 35 minutes or until a well inserted toothpick comes out clean. Remove and cool at room temperature and dust icing sugar on top of the brownie before serving.
