Egg and Meat Medley in Noodle Nest

ABOUT Egg and Meat Medley in Noodle Nest RECIPE

The technique and the addition of the eggs and meat together with the other ingredients elevate the humble noodle into something exotic. This dish makes for a delightful light lunch.

Ingredients Serving: 2

  1. 1 X 85 gms. packet Instant Noodles (I have used the Mi Goreng Fried Noodles)
  2. 2 eggs + 1 egg white for scrambling
  3. 1 egg yolk for binding the noodles
  4. 1 tbsp Milk
  5. 1 to 1-1/2 tbsp butter
  6. 2-3 tbsp of any chopped cold meats (e.g. ham, chorizo, salami or combination of meats)
  7. 2 tbsp of chopped capsicums (I have used red and yellow)
  8. 2 tbsp of chopped spring onions (whites and greens)
  9. Salt and pepper to taste
  10. Oil to grease the muffin pan
  11. A handful of salad leaves tossed with some olive oil, salt pepper and a drizzle of balsamic vinegar and sprinkled with toasted sesame seeds

Instructions

  1. FILLING:
  2. Beat the eggs (2 eggs + 1 egg white) and milk till fluffy.
  3. Heat butter in a non-stick pan. When the butter is hot, add the cooked meats and toss for a minute. Next add the capsicum and continue to sauté for 30-45 seconds.
  4. Add the well beaten egg and mix gently to scramble. When nearly done add the salt and pepper to taste and cook till done.
  5. Switch off the flame and add the chopped spring onions. Filling is ready to be put into the nests.
  6. NESTS:
  7. Cook noodles as per packet instructions. Drain the water.
  8. In a separate bowl, add all of the seasonings from the noodle packet. Toss the drained noodles and mix well. Allow to cool. Would recommend using the noodles which have the powder seasoning as well as the flavoured oil sachets.
  9. Once cool, add the whisked egg yolk and mix well.
  10. Preheat oven to 180 deg C. Grease the muffin tray. Arrange the noodles in the muffin tray forming nests/baskets – above quantity should yield 3-4 nests.
  11. Bake in centre of oven for about 8 minutes. Then put under the grill for a couple of minutes; keep checking to ensure it doesn’t burn. When done take out and let it cool on a cake rack.
  12. Add the filling into the nests and enjoy with a salad of choice.
