Dahi Vada

Ingredients to make Dahi Vada

  • urad dal - 1 cup
  • Thick fresh curd - 1 litre
  • green chillies - 5
  • curry leaves - 1 sprig
  • carrot grated - 1
  • Grated ginger - a small piece
  • mustard - 1 tsp
  • urad dal for seasoning - 1 tsp
  • salt to taste
  • oil for frying
  • coriander leaves for garnishing

How to make Dahi Vada

  1. Soak urad dal in water for 2 hours. Then drain the water completely. Dissolve some salt in a glass of water. Grind urad dal add this water little by little. The batter should be very thick.
  2. Take a large bowl. Add curd, salt. Season with mustard, curry leaves and urad dal.
  3. Take a kadai. Add oil. Once the oil is heated, take urad dal batter on your palm and make a hole in the middle with the help of your thumb like a doughnut.
  4. Slowly drop this vada info oil very carefully. Deep fry them and add to the bowl containing curds.
  5. Repeat the same steps for making the remaining vadas.
  6. Garnish with coriander leaves, grated carrots and grated ginger. Mix well and let it soak for an hour.
  7. Serve the delicious dahi vadas.

My Tip:

Please add water carefully as the batter should be very thick. Vadas absorb curd when soaked for a long time. Then you can add more curd while serving. If the curd is very sour, then you can add little milk.
