ABOUT Hedgehog Egg Buns RECIPE

I love to try out new recipes especially baked ones. Hedgehog buns are one of those buns which i always wanted to try out. I got the idea of making hedgehog buns long time back by seeing their images in google and hence gave it a try yesterday. I was little bit doubtful how they would turn out but the result was awesomely soft buns and perfect texture. I stuffed my buns with boiled eggs but you can add filling of your choice. Its a perfect snack for kids because you can add in those vegetables which they do not enjoy much.

Ingredients Serving: 5

  1. 2 cups of all purpose flour ( i have replaced two tablespoon of all purpose flour with whole wheat flour because i wanted the dough to be more firm)
  2. 2 tbsp yeast dissolved in 1 cup water with 2 tbsp sugar
  3. 1 tbsp oil
  4. Salt according to taste
  5. Little flour for dusting
  6. Milk / egg white for glazing the buns while baking
  7. 1 tbsp butter for brushing after the buns are done
  8. 10 cloves for making eyes and nose
  9. For filling:-
  10. 2 hard boiled eggs
  11. 1 medium sized onion sliced
  12. 2 cloves of garlic
  13. 1 tbsp tomato ketchup
  14. 1/2 tsp each coriander, chilli, turmeric and garam masala.
  15. 1/2 tsp oil
  16. few curry leaves

Instructions

  1. First we will make the filling. For making filling, heat oil in a nonstick pan add sliced onion, curry leaves and minced garlic and fry till the raw smell goes off. Now add in all the spices and salt and saute well. Switch off the flame and let it cool.
  2. While the filling is cooling we will make the dough for our buns. First add yeast and sugar in luke warm water and let it prove. Then in a vessel sift all purpose flour.
  3. Here what I have done is, after measuring 2 cups of all purpose flour I have removed 2 tablespoons from it and then replaced it with 2 tablespoon of wheat flour.
  4. Once the yeast mix is frothy add it to the flour and combine it. Remove this dough in your kitchen slab and start kneading it till you get a smooth dough.
  5. Add little oil above the dough so that it does not dry up.
  6. Cling wrap the dough and let it rest for about 15-20 mins till it doubles it size.
  7. Once its double its size again put it on kitchen slab and knead it well. Divide it in small pieces and knead each piece well.
  8. After kneading place the filling inside with half a boiled egg. Seal the edges and gently roll it in between your hands and the slab.(refer pics).
  9. Place them in a well greased baking dish and with the help of a small scissor cut them gently (not too deep just a little bit to give the hedgehog effect). Insert three cloves to make eyes and mouth and make two flat balls from the dough for the legs.
  10. Leave this for second rise and after second rise brush it with milk or egg white and bake it in a preheated oven 200 degree celcius for 10-15 min.
  11. Once done remove from the oven and serve hot.
