ABOUT Egg Garland RECIPE

This is a traditional sweet of Malabar (the North Kerala) and is served on auspicious occasions. It's everything egg!! Soft and luscious egg white cake topped with beautiful, delicate and appealing golden yolk strings, a must try this festive season!

Ingredients Serving: 6

  1. Eggs – 5
  2. Sugar – 1/2 cup
  3. Water – 3/4 cup
  4. Cardamom – 2
  5. Disposable glass - 1 (material required)
  6. Needle - 1 (material required)

Instructions

  1. Separate the egg yolks and whites for all the eggs.
  2. Make 3 holes at the bottom of the disposable glass and keep it ready.
  3. Now lightly whisk the egg yolks and keep it aside.
  4. Boil water in a pan and add in the sugar to make a sugar syrup.
  5. Now to this boiling sugar syrup, we have to pour in the egg yolks through the holes in the disposable glass.
  6. Rotate the glass so as to form chains of egg yolks. Do not pour everything at once, it may not cook evenly.
  7. Cook for about 1-2 minutes, lightly moving them with a slotted spatula.
  8. Then remove from the syrup and allow it to cool. Repeat until all the egg yolks are used up.
  9. Now allow the remaining sugar syrup to cool.
  10. Once it is cooled, mix it with the egg whites.
  11. Add in the powdered cardamom and whisk the egg white mixture well.
  12. Now steam this for 15-20 minutes, until cooked completely.
  13. Allow to cool.
