Egg rice made with tomato. This Andhra style Tomato Egg rice is made with tomato and scrambled egg.

Ingredients Serving: 4

  1. Basmati Rice - 1 1/2 cup (boiled)
  2. Egg - 1
  3. onion - 1
  4. Garlic - 3 pods
  5. Tomato - 1
  6. Green chilli - 2
  7. Cuminseeds - 1/2 tsp
  8. Mustard seeds - 1 tsp
  9. Curry leaves few
  10. Chilli powder - 1 tsp
  11. Turmeric powder - 1/2 tsp
  12. Coriander powder - 1/2 tsp
  13. Garam masala - 1 pinch
  14. Salt - As required
  15. Oil - as required

Instructions

  1. Beat the eggs.
  2. Heat oil in a pan and splutter mustard seeds and then curry leaves.
  3. Add garlic and then onion and saute till the onion becomes translucent.
  4. Add eggs and scramble them.
  5. Add chillies and tomatoes and saute till the tomato becomes pulpy and the oil comes out.
  6. Add chilli powder, turmeric powder, coriander powder, garam masala and salt and mix well and keep in simmer for 2-3 minutes.
  7. Add the cooked rice, mix well and cook for 2 minutes.
  8. Serve hot with any curry.
