ABOUT Hollandaise Sauce RECIPE

This classic sauce makes a beautiful pair with asparagus, sandwiches etc.

Ingredients Serving: 5

  1. 3 egg yolks
  2. 1½ tbsp cold water
  3. 3 tsp lemon juice
  4. 1/3 cup clarified butter warm
  5. Pinch of salt
  6. Pinch of cayenne pepper
  7. Hot water as needed

Instructions

  1. In a stainless steel bowl over simmering water or in top of a double boiler, vigorously and continuously whisk together egg yolks, cold water and lemon juice until mixture thickens and doubles in volume.
  2. Continue whisking; gradually drizzle in warm clarified butter, salt and cayenne.
  3. Mixture should thicken and double again in volume.
  4. Remove from heat.
  5. Taste for salt and pepper
  6. Keep in warm spot until ready to serve.
