Baigan ka Bharta

Ingredients to make Baigan ka Bharta

  • 2 egg plant
  • 1 tbsp oil
  • 2 onions
  • 2-3 tomatoes
  • 1 green chilli
  • 1/2 tsp zeera
  • salt to taste
  • 1/2 tsp red chilli powder (degi mirch)
  • 1/2 tsp amchoor powder

How to make Baigan ka Bharta

  1. Peel off and cut the eggplants into 4 pieces and put in pressure cooker with a little water and cook for about 2-3 whistles.
  2. Let all the steam escape and strain the water.
  3. Now take a wok, add oil, add zeera, as it starts crackling, add chopped onions.
  4. Let the colour change to pink, add chopped tomatoes and green chilli.
  5. Cook the tomatoes for about 1-2 minutes.
  6. Add mashed baingan, mix it and cook for about 1 minute.
  7. Now add salt and red chilli powder and cook for 1-2 minutes.
  8. When baingan bharta gets ready, add amchoor powder.
  9. Mix it, sprinkle garam masala and serve with hot chappati.
