ABOUT Baked Egg Samosas RECIPE

An Egg-xotic envelope filled with Egg-cellant stuffing! Who says samosas should be in its classic cone shape.

Ingredients Serving: 2

  1. For envelope base:
  2. All purpose flour 1/2 cup
  3. whole wheat flour 1/2 cup
  4. Melted butter 1 tablespoon
  5. Salt to taste
  6. Lukewarm Water 1/2 cup or as required
  7. Milk for brushing 1 tablespoon
  8. Filling:
  9. Hard Boiled Eggs 2 cut in length
  10. Boiled Sweet corn 2 tablespoons
  11. Cubed Red & Yellow Bell Peppers 1/2 cup
  12. Cubed Onion 1/2 medium sized
  13. Oil 1 tablespoon
  14. Salt to taste
  15. Crushed Black Pepper 1/4 teaspoon
  16. Ginger garlic paste 1 teaspoon
  17. Chaat masala 1/4 teaspoon
  18. Mixed herbs 1 teaspoon
  19. Tomato sauce 1 teaspoon

Instructions

  1. Mix all the dry ingredients in a bowl and knead a stiff dough using lukewarm water.
  2. Keep the dough aside covered with a damp cloth for 15-20 minutes.
  3. Slice the hard boiled eggs length wise and sprinkle chaat masala and keep aside.
  4. In a non stick pan, heat oil and add onions.
  5. Sauté for a few seconds and add ginger garlic paste and mix well.
  6. Now add bell peppers & sweet corn and sauté again for a few seconds.
  7. Add salt and pepper and switch off the flame.
  8. We want the sautéed veggies to maintain some crunch, so avoid over cooking them.
  9. Now roll the dough into thin chapatis and with the pizza cutter shape them into squares.
  10. Spread tomato sauce in the centre and add sautéed veggies.
  11. Add sliced eggs and fold the square into envelopes.
  12. Follow the same procedure for rest of the dough.
  13. Preheat the oven at 200 degrees while preparing these.
  14. Brush these egg envelopes with milk and bake them in a greased pan for 15-20 minutes or until golden brown.
  15. Serve hot with any sauce or chutney.
