ABOUT Farm Fresh Frittata RECIPE

An Italian baked egg dish that can be made with almost anything and had at any time.

Ingredients Serving: 2

  1. eggs - 6
  2. Olive oil - 2 tbsp
  3. Green capsicum (diced) - 1/4 cup
  4. Red / Yellow capsicum (diced) - 1/4 cup
  5. Mushroom - 3 medium sized
  6. Spring onion - 1 with green tops
  7. Milk - 1/2 cup
  8. Cheddar cheese (grated) - 1/2 cup
  9. White pepper powder - 1/4 tsp
  10. Salt to taste

Instructions

  1. Wash and dice the capsicum and spring onion.
  2. Wash and slice the mushrooms.
  3. Grate the cheese and keep it aside.
  4. Heat olive oil in a wok and add the spring onions. Saute till soft.
  5. Add the capsicum and mushrooms. Saute till the veggies are soft and no traces of moisture is there. This will take around 5-7 minutes.
  6. Season with salt and pepper.
  7. In the meanwhile, pre-heat the oven to 180 C.
  8. Grease an 8-inch round baking dish.
  9. Whisk the eggs lightly in a bowl.
  10. Add the cooked veggies, milk and grated cheese. Mix.
  11. Pour the mixture in the prepared baking dish.
  12. Bake for 20-25 mins at 180 C
  13. Remove from the oven and let it cool for about 5 mins.
  14. Cut out wedges and serve with a tall glass of iced tea.
