ABOUT Red Velvet Cheesecake Swirl Brownies-low Cal RECIPE

Inspired by the Theobroma special, I worked on a recipe that I saw on food network,until it I could reduce the calories by a third and use pantry staples of our desi kitchens without having to order super expensive imported ingredients.

Ingredients Serving: 9

  1. 3/4 cup all purpose flour or maida
  2. 1/4 cup cocoa
  3. 2 tbsp red food color
  4. 1 cup butter
  5. 3/4 cup sugar
  6. 1 tsp vinegar
  7. 2 eggs
  8. 1/2 tsp salt
  9. 2 tsp vanilla
  10. 1 cup hung curd made with full fat milk
  11. 1 egg yolk
  12. 1/4 cup sugar
  13. 1/2 tsp vanilla

Instructions

  1. Pre heat oven to 175°C. Line, grease and flour a square brownie tin.
  2. Melt the butter in a large bowl, either in your microwave or on the gas stove. Just warm. Not hot. Add in the sugar and whisk. I used my electric beater. A whisk will do.
  3. Beat means just run the beater for 5 - 10 seconds. Add Vanilla essence. Beat. Add cocoa powder. Beat. Add salt. Beat. Add food colour. Beat. Add vinegar. Beat. Add eggs, whisk for about 30 seconds.
  4. Sift in the flour and fold in. DO NOT BEAT.
  5. In a separate bowl, combine the hung curd cheese, sugar, vanilla essence and egg yolk. Beat for a minute till it is smooth. Now pour most of the brownie batter leaving a couple of tablespoons into the prepared cake tin.
  6. Plop the cream cheese mix in places. Scrape what's left of the brownie batter in the space between the cream cheese mix.
  7. With a knife, make patterns like swirls.
  8. Place in the oven for 45 minutes. The brownie should look squiggly in the centre, but the sides should be done.
  9. Remove and cool for 30 minutes.
  10. After the brownie has cooled, with a large knife, cut the pieces.
