Ingredients Serving: 2

  1. All purpose flour 1 cup
  2. Eggs 2
  3. Scrapped Coconut fresh 1/3 cup
  4. Brown sugar 3 tsp
  5. Coconut milk 1/2 cup
  6. Honey 2 tsp
  7. Baking Powder 1 Tsp
  8. Vanilla extract 1 tsp
  9. Butter 4 tsp

Instructions

  1. Take a large bowl.
  2. Put flour, coconut, baking powder, 2 tsp sugar, coconut milk and vanilla extract.
  3. Mix well with spatula.
  4. If the batter is very thick then pour some more coconut milk.
  5. The consistency of the batter should be little thick and not runny.
  6. Now keep aside the mixture for 15 mins.
  7. Heat a nonstick pan, put 1 tsp butter or olive oil.
  8. Pour a full ladle of batter and wait for 30 secs, put some brown sugar over the pancake and flip it.
  9. Fry the other side also for 30 secs, or until they are brown in colour.
  10. Serve with honey or maple syrup.
