ABOUT Adarsh Egg Pulao RECIPE

This is mildly spiced and flavoured rice cooked with red lentils and eggs. It's a meal by itself. Also goes well with raita.

Ingredients Serving: 5

  1. Basmati rice 2 cups
  2. Red lentil (sabut masoor) 1/2 cup
  3. Onion chopped 1
  4. Ginger chopped 1 tsp
  5. Green chillies chopped 1 tsp
  6. Coriander leaves chopped 2 tsp
  7. Spring onions for garnishing
  8. Boiled eggs 3
  9. Green cardamom 3-4
  10. Cinnamon 1" piece
  11. Bay leaves 2-3
  12. Cloves 2-3
  13. Coriander powder 1 tsp
  14. Chilli powder 1 tsp
  15. Salt to taste
  16. Oil 3 tsp
  17. Ghee 1 tbsp
  18. Fried onion 2 tbsp
  19. Fried cashew 10-15

Instructions

  1. In a pan put oil and finely chopped onions and fry till brown.
  2. Add ginger, green chilli, coriander leaves and saute for a minute.
  3. Now add bay leaves, cardamom, cinnamon, cloves to it, add dhania powder, chilli powder also.
  4. Put the basmati rice and masoor in it, which is previously soaked for half an hour.
  5. Add water and salt. And let it cook as we do for normal rice.
  6. Once water evaporates, just few minutes before it's fully cooked place boiled eggs which is cut in two halves over the rice, sprinkle salt and black pepper over it.
  7. Once pulao is ready heat ghee and pour over the pulao.
  8. Garnish with fried onion , cashews and spring onion.
