Egg curry with poppy seeds paste - A Bengal Favourite!!

Ingredients Serving: 4

  1. Eggs-4
  2. Onion-2 large (sliced)
  3. Poppy seed paste -4 tbsp
  4. Green Chillies-2
  5. Salt-As per taste
  6. Sugar-1/2 tbsp
  7. Turmeric-1 tsp
  8. Red chilli powder-1 1/2 tsp
  9. Oil(Mustard)-2 tbsp
  10. Kalonji(onion Seeds)-1 tsp

Instructions

  1. Boil the eggs. Cut them into halves and put turmeric, salt. Then fry the eggs in low flame for 2 mins and keep aside. Make a paste of the poppy seeds with 3 tbsp water and the green chillies.
  2. Next put the onions in the oil and fry them till brown. Keep them aside. Now put kalonji in the oil and once it crackles add the poppy seeds paste. Add the turmeric and red chilli powder and cook the paste till it changes colour to golden.
  3. Now add 1/2 cup water, salt, sugar and the eggs. Cover it and let it simmer for 5 mins. Now remove the eggs and add the fried onions(keep some onions for garnishing) and then cook the paste til oil starts separating from the sides.
  4. Garnish the eggs with the rest of the fried onions. Serve it with hot rice and savour!
