A unique recipe for an excellent dessert.

Ingredients Serving: 8

  1. For the base : Cornflakes ground coarsely - 1 Cup
  2. Butter - 6 tbsp
  3. Milk - 1/2 Cup
  4. Sugar - 1/3 Cup
  5. For Lime Sorbet : Lime - 4
  6. Lime zest - Of 4 limes
  7. Sugar - 1 Cup
  8. Water - 1 Cup
  9. Egg white - Of 1 egg
  10. For Lemon sauce - Butter - 6 tbsp
  11. Lime juice - Of 4 to 5 lemon
  12. Sugar - 3/4 to 1 Cup (check the lemony taste).
  13. Eggs - 2

Instructions

  1. Dry grind cornflakes. Add butter, Sugar and milk.
  2. Mix well and press into a big tray. Cover and refrigerate.
  3. For lime sorbet : Prepare sugar syrup. Let it cool. Combine the syrup, lemon juice and zest.
  4. Refrigerate for 1 hr. Churn again with fork by breaking the ice that forms. ( like ice-cream ). Refrigerate again.
  5. Take it out from the refrigerator and churn again. After 2 hrs add well beaten (fluffy) egg white and set it again in the fridge. Take out and churn to form peaks.
  6. In a large bowl mix Ice-cream and Sorbet and spread over the cornflakes mixture. Set to cool in the fridge.
  7. For lime sorbet : In a heavy bottom pan mix eggs and sugar. Heat, add lime juice and 6 tbsp butter. Stir till it thicken and coats the back of spoon or spatula. Cool and spread over cooled and firm sorbet ice-cream mix. ( you can adjust sugar according to sweetness you want. )
  8. Let it set for 3 to 5 hrs or may be overnight. Cut and serve after dinner.
