ABOUT Apple Pistachio Cake RECIPE

Eggless Apple and pistachio cake with brown sugar icing.

Ingredients Serving: 6

  1. All purpose flour 2 cups
  2. Corn flour 2 tbsp
  3. Apple 3
  4. Pistachios ½ cup
  5. Butter 1/2 cup
  6. Milk 1/2 cup
  7. Vegetable Oil 4 tbsp
  8. Baking powder 1 tsp
  9. Sugar ( powdered ) 1 ½ cup
  10. Lemon juice 2 – 3 drops
  11. Butterscotch Essence 1 tsp
  12. For Icing :
  13. Butter ½ cup
  14. Brown Sugar / Nattu Sakkarai 1 cup
  15. Butterscotch Essence 1/2 tsp (optional)
  16. Chopped pistachios

Instructions

  1. Mix the butter and sugar together until it is fluffy.
  2. Add in the milk and mix well. Then add the vegetable oil and mix well.
  3. To this add the grated apple, chopped pistachios and mix once.
  4. Add the flour in three parts and mix in the same direction. Add the lemon juice and essence, mix once.
  5. Grease the baking tray and pour the batter in the mould. I used a round mould.
  6. Bake the cake in a preheated oven for 30 – 40 minutes at 200°C.
  7. For the icing: mix the butter and brown sugar together. Apply the icing on top of the cake.
  8. Sprinkle the chopped pistachios on the top.
