Ingredients to make Kaju Katli

  • cashews - 1 cup (levelled)
  • Brown sugar - 1 cup (You can use normal sugar 3/4 cup)
  • ghee - 1 -2 tsp
  • Parchment paper

How to make Kaju Katli

  1. Grind the cashews in a small mixer/grinder continuously or only twice till it is in fine powder form. (Do it continuously or oil will ooze out.)
  2. Heat a kadai, add sugar and a little water. Stir continuously till it is upto 1 string consistency, then add 1 tsp of ghee.
  3. Next add the cashew powder and start mixing it in a low flame until it forms a soft dough.
  4. Grease a plate or parchment paper, transfer the dough and start kneading it, spread and roll it with a rolling pin.
  5. Cut into desired shapes when its warm, then let it cool for sometime.
  6. Remove and store in an air tight container.

My Tip:

Use a non stick kadai or pan.
