ABOUT Avial RECIPE

Avial is originated from South India and is very common in Kerala and Tamil Nadu cuisine. It is a thick mixture of vegetables,grated coconut and seasoning with coconut oil and curry leaves

Ingredients Serving: 4

  1. Drum Stick -2 nos remove the peel and cut in medium size
  2. Elephant Yam:- cut thinly and medium in size
  3. Brinjal:- Cut in thin long pieces
  4. Jerkins:- Cut in thin long pieces
  5. colacassia:- cut in thin long pieces
  6. Beans:- cut in medium pieces
  7. yellow pumpkin:- cut in thin long pieces
  8. Snake guard:- cut in to thin long pieces
  9. Chinese Potato:- cut in to thin long pieces
  10. Bottle Gaurd:- cut in to thin long pieces
  11. Yellow cucumber:- cut in to thin long pieces
  12. potato:- cut in to thin and lon pieces
  13. curry leaves few sprig
  14. Water:- 1 cup
  15. Coconut oil
  16. Salt as per your taste
  17. turmeric:- 1tsp
  18. Green chillies:- 3 nos
  19. Cummin Seeds:- 1 tsp
  20. shallots:- 7-8pieces
  21. grated coconut:- 1 bowl
  22. Raw mango/Tamarind/Yoghurt

Instructions

  1. Coarsely grind grated coconut, green chillies,shallots and cummin seeds. (Please do not make the paste). Set aside
  2. Put all rest all vegetables in big pot, pour water ,salt and turmeric.
  3. Mix well and cover it with the lid and cook until vegetable turn soft but not messy
  4. Once the vegetables is cooked add Mango slices (1 small mango cut in to slices), stir once again cover and allow it cook for 2 mins
  5. Add coarsely ground masala stir once again and allow it to cook for another 2 mins.
  6. Pour some coconut oil on top of the veggies add curry leaves and cover immediately with lid and turn off the flame
  7. Let the lid stay covered for 10 mins to set whole coconut oil aroma in to it.
