Drum Stick -2 nos remove the peel and cut in medium size
Elephant Yam:- cut thinly and medium in size
Brinjal:- Cut in thin long pieces
Jerkins:- Cut in thin long pieces
colacassia:- cut in thin long pieces
Beans:- cut in medium pieces
yellow pumpkin:- cut in thin long pieces
Snake guard:- cut in to thin long pieces
Chinese Potato:- cut in to thin long pieces
Bottle Gaurd:- cut in to thin long pieces
Yellow cucumber:- cut in to thin long pieces
potato:- cut in to thin and lon pieces
curry leaves few sprig
Water:- 1 cup
Coconut oil
Salt as per your taste
turmeric:- 1tsp
Green chillies:- 3 nos
Cummin Seeds:- 1 tsp
shallots:- 7-8pieces
grated coconut:- 1 bowl
Raw mango/Tamarind/Yoghurt
Instructions
Coarsely grind grated coconut, green chillies,shallots and cummin seeds. (Please do not make the paste). Set aside
Put all rest all vegetables in big pot, pour water ,salt and turmeric.
Mix well and cover it with the lid and cook until vegetable turn soft but not messy
Once the vegetables is cooked add Mango slices (1 small mango cut in to slices), stir once again cover and allow it cook for 2 mins
Add coarsely ground masala stir once again and allow it to cook for another 2 mins.
Pour some coconut oil on top of the veggies add curry leaves and cover immediately with lid and turn off the flame
Let the lid stay covered for 10 mins to set whole coconut oil aroma in to it.
