This no fuss coconut truffles was my solution to Diwali dinners inspite oif a busy schedule. It is a super hit each time...shhh..don't let anyone know its this easy.

Ingredients Serving: 5

  1. 15 digestive biscuits
  2. Half cup of nuts of I used cashewnut
  3. Two tbsp of virgin coconut oil
  4. Half cup of desiccated coconut
  5. Half cup of cocoa powder
  6. Two to three tbsp of honey


  1. Break the. Biscuits into smaller size..randomly
  2. To the food processor add the biscuits , nuts cocoa powder and desiccated coconut. Reserve two tsp of the desiccated cocnut to finish the truffle
  3. Pulse till they are crumbly mixture.
  4. Add in the honey (two tbsp) and the coconut nut oil and pulse intermittently so they can combine and be able to hold well. If not enough add in the reserved tbsp of honey too and pulse again
  5. Transfer the contents to a kneading plate for easy access. Roll into lime sized or smaller balls.
  6. Roll the truffle in the reserved desiccated coconut. Now the truffle will be a bit soft...
  7. Chill till serving so that the coconut oil can hold well.. enjoy a happy stress free diwali!
