Ingredients to make Kala jamoon ! Irresistably Good !!

  • For the outer layer : 1.5 cups : Full fat Milk powder ( i used Nido)
  • 3 tbsp : all purpose flour
  • A pinch : baking soda
  • A pinch : salt
  • 2 tsp : Melted butter / ghee
  • 2 tbsp : yoghurt
  • oil for Deep frying
  • For the Green center : 3/4 cup : Full fat Milk powder ( i used Nido)
  • 1 tbsp : all purpose flour
  • 1 tsp : Melted butter / ghee
  • 1 tbsp : yoghurt
  • Pinch or few drops : Green food color
  • 1 tbsp : Crushed pistachios
  • For sugar syrup : 1.5 cups : sugar
  • 2 cups : water
  • Few strands saffron
  • 1 tsp : cardamom powder

How to make Kala jamoon ! Irresistably Good !!

  1. In a bowl add in flour, milk powder, salt, baking soda, ghee and curd mentioned in the outer layer list.
  2. knead them to a soft sticky dough. Adding more curd if required. Now cover and let the dough rest for 5 mins while you prep up with the green center.
  3. In another bowl add in the ingredients mentioned in green center list and knead them to a soft dough . Keep this covered and let the dough rest for 5 mins.
  4. After five minutes uncover the dough(both white and green) and divide each dough into 24 portions. Roll them into smooth balls.
  5. Green ones will be half the size of white ones.
  6. Meanwhile start off with the sugar syrup,Take sugar and water in a sauce pan, bring it to boil. Simmer it for 5 to 8 mins till it gets little sticky. No need of string consistency.
  7. Now add in cardamom powder, saffron and mix well. Keep the syrup covered until required.
  8. Start shaping the jamoon now. Take a white dough ball and pat it into oval shape.Place a green dough oval log in the center of the white one and re shape it to a oval jamoon.
  9. Repeat the process and shape every jamoon in the same manner.I made few rounds and a few oval shaped ones.
  10. Once the oil is slightly hot add the jamoon one by one and fry on low to medium heat until dark in color.
  11. Fry the shaped jamoon adding four to five of them at a time and do not over crowd. Once they turn dark , drain and add them to the warm syrup.
  12. Let the jamoon soak for couple of hours in the syrup and later serve them warm or cold. Yummy yummy Kala jamoon are ready to hog on !
  13. Man! These look so gooooddd cannot stop admiring,Phew my effort paid off !
  14. Simple,tasty yet done in no time ! Wah .what a package :)

My Tip:

Knead the dough slightly sticky, in the resting process the dough tends to absorb the moisture and turns out dry n crumbly giving us hard time to shape. Do not worry that its sticky , once the dough rests it becomes pliable. Do u want to make less/more quantity ? No problem just keep in mind the white dough has to be double to that of green dough that's it . You can shape them either oval or rounds either ways tastes and looks equally scrumptious ! Fry the jamoon on low to medium heat or else jamoon will be under done in the center and they will not absorb the syrup which is a big No No ! No need of string consistency to the syrup.Once sugar is melted just simmer for few mins and that works best. Make sure to drain the jamoon well before adding to syrup. The syrup has to be warm while adding the jamoon.If the syrup is cool just heat it for few mins while adding. Traditionally they are rolled in desicated coconut just before serving. I did not do that but choice is up to you.
