Ingredients Serving: 4

  1. Dried apricots (Khubani or Jardaloo) - 500 gm.
  2. Sugar- 1/4th cup
  3. Honey- 30 ml (If you want to avoid using sugar then add only
  4. Water-3 cups
  5. lemon Juice- 2 ml
  6. For Garnishing:
  7. almonds blanched peeled and slivered-10 gms
  8. pistachio nuts blanched peeled and slivered - 10 gms
  9. apricot kernels: 10 gms
  10. For Accompaniments: Vanilla Ice-cream
  11. Fresh cream whipped


  1. Wash the apricots and soak in 3 cups of water for 5 hours.
  2. De-seed the apricots, chop 3/4th of the apricots and the ¼th cut into halves. Place in a pan along with the water it was soaked in, add in sugar and honey.
  3. Cook over medium heat for 10 to 15 minutes, till the sugar dissolves and the mixture becomes pulpy and blended. Keep the bigger apricots aside and puree the rest 3/4th apricots. Cook the puree till it thickens and starts to bubble.
  4. Add lemon juice and stir well.
  5. Transfer into a serving dish and let in cool.
  6. Serve cold accompanied with ice-cream and top with freshly whipped cream.
  7. Garnish with blanched almond and pistachio nuts slivers and apricot kernels.
